Ok... well the various packed lunch threads have plenty of other offerings, some of which you might be happy with cold...
..or there's the food flasks option and fill with either soups or casseroles.

Left overs from day before? Pasta or rice salad with meat or cheese? HM Quiche, Sausage rolls, pasties or Pizza?
If you have access to a microwave then you could make HM chiili or curry etc and freeze into single portions and take out daily for a jacket spud. If toaster-beans/spagetti.
You can knock up cheap sarnie/roll fillings: egg mayo, ham,cheese spread, paste, cheese, tuna, marmite, chicken and stuffing etc. Have you got a BM? Maybe try and make your own bread.
When DD was having pack up, sometimes I would knock up a weeks worth of sarnies and freeze them and get out daily.
Cold chicken pieces. Leftovers from other meals or make extra portions and freeze and re heat in microwave.

Hiya, i have the same prob
I do find that making a whole load of pasta is good for a couple of days, but come the next day...you are bored! So i would suggest chopping lots of nice veggies and add them the day you are going to eat it, so you can vary it a little bit.

Our eldest son doesn't like sandwiches, so he was looking for something different, so he's having a go at Bento Boxes, basically Sushi type packed lunches, we just got him the book from Amazon. He's a student so he's into keeping an eye on the cost. After initial ingredient purchase he thinks it won't be that expensive. Still getting his ingredients together at the moment.

Normally for packed lunches for rice/pasta/potatoe salads the next day we just cook more the night before.
You can do a sort of thick Frittata/spanish omelette, that you just eat cold the next day with maybe green salad (it's a bit like a quiche without the pastry).
The other idea is to take a home made dip or cottage cheese in a container and either some vege sticks to dip in or some nacho's/crisps etc..

Firstly on the sandwich front - you can make up sandwiches, and then freeze them, as long as the fillings do not have a high water content - so def lettuce, cucumber and tomato are out!!! This cuts down on the daily chore - and if you 'forget' to label them its kind of 'lucky dip'!! Tuna, cooked meats, cheese all freeze well. I have to make 3 packed lunches most days - and this really helps! Things like ciabatta with mozzarella and ham work well - particularly if the 'eater' has access to a microwave to melt the mozzarella. Bagels with smoked salmon and cream cheese - not always that expensive, and can help to break the monotony of cheese and pickle!!!
I work on a 'rota' basis - sad but true....
Mondays always a pitta day (mine love them) - fillings range from chicken and redcurrant, tuna and mayo, cheese and pickle, houmous, BLT, bacon and egg!!
Tuesday - Salad
Wednesday - Roll - various fillings
Thursday - quiche, or 'pastry' - ie pasty, sausage roll, pie
Friday - wraps, cheese scones, bagels, cheese and biscuits....
All salads - pasta, rice and lettuce are good. Go for the inventive approach - chicken salad, cooked eggs and croutons. Send salad dressing in little tub or jar.
Cold left over cooked chicken & potato wedges, Mini pasties. Cold Pizza slices. Understand OH not keen on pittas - but mini ones, toasted and then sliced are rather nice, particularly with houmous - or so the kids say!!
Cheese scones, or even cream tea - send the scones in, small pat of butter, pot of clotted cream and some jam.... yummy..... remember to include knife!
Wide neck flasks very good for soups, casseroles, stews.

Thanks frugal, there are lots of really good ideas there which will help with my lot who are getting a bit fed up with sandwiches.
