Wanting help with packed lunches.

    thanks for all the advice- did the weekly shop with your ideas in mind and this is what is planned for the week ahead
    today a sandwich with leftover baguette from yesterday
    tonight we are having cous cous, chicken and roast veg for dinner so will make a little extra and leftovers will be tomorrows lunch with added tomatoes, cucumber and seeds.
    wednesday - breadsticks, carrot and celery sticks and a pot of hummous (i'm planning to make some today so fingers crossed it's succesful!)
    thursday -a wrap filled with leftover caesar salad from the previous nights tea
    friday -cheese, crackers and chopped apple and chorizo.
    sounds much nicer than an overpriced sandwich from boots!
    and though dp has been grumbling, he will come round to it! he has no choice..hehe

    my friend suggested that you can revive stale bread by covering with a damp tea towel for a while and then giving it a quick blast in the oven, does anyone know if this works?

    wet the loaf under the tap then put in the oven for 5 minutes

    packed lunch is so much better, my kids today have cheese sarnies, fruits and some dried banana chips.

    As treats they vary between the banana chips, dried mixed fruit, hm cakes, hm popcorn and so on. most but the grumpiest oh would be glad of these too!

  • thanks for the great ideas especially the advice about freeezing sarnies, never thought of that. I have four packed lunches to do and I'm getting bored with what I dish up never mind the rest of them. Wraps are particularly great as they don't get soggy like bread.

  • great thread! i dont really like bread so i try to have different lunches too. potato salads and pasta salads are good. ONe of my favourites though is leftover paella from the night before. i do a vege one with lots of different veges, and bake enough jsut to have lunch the next day. i dont like keeping it for more than a day as i get bored with it!! int eh morning, jsut grate some cheese over it and eat cold.yum!

    ooh..hadn't thought of potato salad, we have a glut of sweet potatoes that were a bargain from the market..will have to make some!
    paella sounds good too..this is making me hungry, hehe!
