    On the subject of coconut, what can I do with a fresh one? I bought it at the asian supermarket last week on a whim and now haven't a clue shocked.gif

    once you've got the flesh out, you can grate it (food processor works well) & freeze it, giving it a shake every hour for the first few hours of freezing & you'll have free-flow fresh coconut for any recipe that requires it :)

    some of my favourite recipes ask for it & there really is no substitute (dessicated just doesn't have the flavour or texture) but it's such a hassle preparing fresh coconut each time so it's great having it ready

    for coconut milk & cream I use coconut powder, tastes great dipped straight from the pack too :D
  • just bought a block only i need 150ml coconut cream for the curry recipe how do i convert it over?
  • Just grate it and add boiling water to dissolve. Sorry cannot help with proportions just experiment until you get the required consistency.
  • ta ! after reading your note i went and made it by pouring the amount of hot water that i needed and just added the coconut till i got what i thought was passable lol. worked out fine
