Our wedding feast sounds very similar to what your trying to acheive, we only had 25 people. Our solution to the fussy eaters was to serve the meal banquet style, platters on the table with jugs of sauces, large knives to carve the meat etc etc etc it meant those who wanted plain could have meet & veg without the sauces etc they didn't like and everyone could try everything (our veggie dishes went down a storm with the meat eaters!)
It also meant everyone was very chatty and helped conversation, pass the sauce etc rather than a plate just appearing in front of them.
Only advice is to have the same dish a few times so people aren't really reaching over to get what they want.
Three years later people still talk about how wonderfull our food was so i'd say go for it, no-one remembers the limp chicken and cold spuds!Don’t ask what the world needs. Ask what makes you come alive, and go do it.
Because what the world needs is people who have come alive.0
