    If you're going to be at home while it's cooking you can keep checking the liquid levels & add more if necessary. It's better to add more than have too much to start with & have a runny stew. If it is too runny try cooking it for the last 1/2 hour with the lid off.

    I've noticed that a dash of vinegar gives a casserole of any sort a winey flavour. I picked it up from a Delia recipe for a pork casserole and have used it ever since. I don't really like wasting too much wine on cooking.

    Another thing: if it's too runny, ladle the excess into another pan and boil it rapidly until it has reduced quite a bit, then put it back. The flavour is more intense.

    If it's too runny you could also freeze the liquid and have it another day as a soup.

    Hi,

    Does anyone have a nice cheap recipe for beef stew? I've got the beef, carrots, onions, garlic. But not sure what else goes in it!!

    With your ingredients, I'd add water or stock, maybe a tin of tomatoes, some herbs if you fancy it, and cook it nice and slowly.
