Ok, I've had a taste, and it's almost perfect. It's still lovely and sharp, but there is a bit too much ginger.

Do you possess a slotted spoon? You could just lift the fruit into the dish that way and leave the excess liquid in the pan?
It does look a bit loose, but it also does need some moisture0 -

Can't believe four pages of this thread and no-one has thought to mention checking whether the plums still have stones in.
As you say it's too late now, just be careful when eating that you don't break a tooth or several.

I have two questions:
1. Does the fruit need to be hot when I build the crumble? (I have made the topping)

I would say no, the filling doesn't have to be hot. And i'd bake it at 180 (fan)0
