With seeds and seedlings would I be right in saying that you should sit the tray in water rather than water from the top? And how often would you top this up?

I think a clue is the dreaded words 'small plastic greenhouse.' These things can heat up quickly and create very high temperatures on a decent day. Overwatering probably exacerbated the problem, but it is quite hard to kill things like spinach in 24 hours by overwatering alone.
I'd not be without a maximum/minimum thermometer to show me what's going on when I'm not there.0
