Oo these ideas are great thanks! I have loads of meat in the freezer. Veg wise I have broccoli, cauliflower, onions, carrots, spinach and some spuds. Probably have some mixed frozen veg lurking in the freezer too. Have a healthy store cupboard too with lots of herbs and spices and some flour etc too

My standard things are to either to dice into smallish chunks, stir fry and put on a pizza along with some mozzarella and the basic tomato sauce
or slice, shallow fry and dress with some kind of salad dressing as an accompanying dish - usually a vinagrette with whatever herbs I have to hand. Both are tasty but not exactly super healthy

Also, you can roast it with onions, peppers etc for ....
Adding in a pasta sauce
Couscous with some spices
Layer in a lasagne
In a curry sauce
Mix with roughly mashed beans/chickpeas/potato and make into burgersCurrently studying for a Diploma - wish me luck

I like to slice it up about 1cm thick, brush it with olive oil, sprinkle on pepper and fry it each side until it's brown. Then put it in vegetable lasagne.0

Well - substituted the lamb with lentils - bunged it all into together rather following all the steps and crumbled a bit of feta over it at the end - but still just as tasty as when I followed the recipe last time :-)0 -
I bought my first aubergine last week and at the weekend made aubergine pamigiana which was gorgeous and DH & DD liked it too

Another vote for aubergine parmigiana. Made it yesterday as aubergines are part of Aldi super 6 this week for 39p each.
To cut down on the amount of oil, I slice them and then brush with a little oil and put on a hot griddle pan. For two aubergines I used perhaps 3 TBSPs oil.
If you want it even healthier, you can do that with half and par boil half for a few minutes. Then use them in alternate layers. This really, really works. You can't tell that they aren't all fried. Oh, and I made a big pot of bolognaise sauce yesterday and used that to layer up. It was sooooooo good. Plates licked clean!Father Ted: Now concentrate this time, Dougal. These
