    I love veggie food, OH less so :(
    Things we have are :
    mushroom risotto, pea and mint risotto, artichoke risotto (lots of risotto)
    pasta with roasted tom sauce (nice with onions/peppers and some balsamic)
    pasta with chilli kale etc
    chickpea, pepper and onion stew (lots of smoked paprika-quite often will put some chorizo in there-I know not veggie :o lol but a little goes a long way and pacifies OH-on that note things with some pancetta go down well-but still significantly cuts down on meat intake-85g pack serves 2)
    I love omelettes, veggie currys, veggie pasta, as I say OH not so much, so its a compromise.

    Oh thai curry-fab veggie meal, loads of veg, curry paste and coconut milk-yum

    Google "Cranks" + "recipes" - and you should come up with the recipes on the Cranks' website. They are the ones who invented Homity Pie and the recipe is on there.

    i'm veggie so have a meat free meal every night!Favorites are

    Vegetable lasagne (made with vegetable ratatouille)
    Cheese pastry veg pie (innards veg ratatouille again with cheese in pastry and in pie)
    macaroni cheese
    veg pasta bake
    lentil bolognese
    veg stew and dumplings, using all root veg, also soup and broth mix
    vegetable shepherds pie
    bubble and squeak, i like to put onion cabbage mushrooms and swede, brown it off and smother in ketchup!
    vegetables cooked in stock cube and poured over rice or noodles
    rice stuffed tomatoes
    if i have any spare portions of cheese sauce and ratatouille left i mix it into pasta as another pasta bake
    and just discovered tortilla wraps, did a stir fry and put them in with some salsa, was delicious!

    I've been having this a lot (in fact, maybe I ought to have something else for a change!) recently with a baked potato. The baked beans are 29p, the kidney beans are 19p and one little loose chilli is usually 3p. It lasts me two days. The baking potatoes are currently on offer at 4 for 27p.

    REFRIED BEANS

    These are only fried once. The name is due to a mis-translation. In Castilian Spanish and English, the prefix re- indicates that something is done more than once. However, in Mexican Spanish, the prefix re- indicates that something is done well. As this dish is Mexican, its name, frijoles refritos, is in Mexican Spanish and translates into English as "well-fried beans" and not "twice-fried beans".

    Serves 2 - 3

    INGREDIENTS

    420g tin of baked beans
    400g tin of red kidney beans
    1 chilli pepper
    1 onion
    1 tablespoon of oil

    FRESH CHILLI PEPPER WARNING!
    When you chop up fresh chilli peppers be careful and avoid getting juice on your hands. If you touch your eyes, mouth or other ‘sensitive areas’, even an hour after chopping them, they will smart and burn. So wash your hands or wear rubber gloves.

    METHOD

    Open the tins of beans and drain off the water. Cut the top off the chilli pepper, cut it in half and scrape out the seeds, then chop it into pieces. Peel the onion and chop it into pieces.

    Put the beans into a bowl. Add the chilli. Mix thoroughly.

    If you have a food processor, put the beans and chilli in it and blend them to the desired consistency. If you have a hand blender, put the beans and chilli into a bowl and blend them to the desired consistency. If you don’t have a food processor or hand blender, put the beans and chilli into a bowl and use a potato masher or fork to mash them to the desired consistency. The desired consistency is like porridge or double cream. If required, add a little bit of water.
    Put the oil into a frying pan on a medium heat. Add the onion. Fry the onion for about 5 minutes until it is soft. Stir frequently to stop them sticking.

    Add the beans and chilli. Mix thoroughly. Fry for about 5 minutes. Stir frequently to stop it sticking.

    ADDITIONS & ALTERNATIVES

    Use other beans, especially pinto beans, which are the authentic Mexican cowboy bean. Use dried beans, but these need to be soaked and boiled first.

    If you can’t find just one chilli pepper, use 1 teaspoon of chilli powder.

    Add a teaspoon of ground cumin. Cumin comes from Asia, but the Spanish brought it with them to the New World, where it is now widely used in Tex-Mex cuisine.

    Serve with corn bread or tortilla chips and salad, wrapped in tortillas, with other Tex-Mex dishes, or as a filling for a baked potato.

    TIPS

    Let it cool and reheat it, as the flavour of chilli improves with reheating.

    DD is a vegetarian and we all have the occassional meat-free meal
    HM Soups are faves in my house are cream of mushroom , cream of celery, parsnip and apple and chicken and sweetcorn chowder all served up with HM crusty Bread.

    vegetariaan cheesecake made with crackers for the base and topped with philli and veg - varied to what you have in
    Stuffed Mushrooms
    Stuffed Peppers
    Macaroni Cheese
    Vegetable curry
    Cheese and onion pie
    Quiches
    Jacket potatoes
    Mushroom Rissotto
    Spinach Rissotto
    Cauliflower and Broccoli with a cheese sauce
    Savoury pancakes filled with veg and topped with any sauce of choice
    glamorgan sausages
    Use soya mince instead of meat
    I also keep a couple of bags of TVP in and make stews, stir fries and curries with it instead of using meat ( Holland and Barratt sell it (99p a bag)

  • Wow! Thanks for all the replies guys! All sounds delish but I'm loving the refried beans, risottos and the pasta with brocolli idea! Quiche also sounds wonderful, but I'm awful at pastry (even rolling out the shop bought stuff) so I think a big spanish ommlette might be better!

    We got some stilton gifted on a little cheeseboard so I think I'm going to make a big pot of brocolli & stilton soup for lunches at work this week.

    And some tuna fishcakes!

    Sweetcorn chowder also sounds great! How do you make it?

    Gosh it really opens my eyes to how much amazing, tasty and frugal vegetarian stuff is out there!

    As you may or may not know Weezl has been putting together a subsistance plan on eating for 80p a day. The first month which was for the meat eaters, although was about 50% veggie has just run with test families and was very sucessful. She and the group are now working on the veggie plan. She is looking for people to test the recipes and give feedback. Then eventually this veggie plan with run for a month with test families. She is also in the process of putting a fab website together which shows the first months plan and the recipes to test.

    Savystudent - not necessarily moneysaving, but if you hate making pastry or can't make it well you can buy the ready made quiche flan pastry cases in most supermarkets. I always keep one in stock because they're so easy to produce a quick savoury quiche with bacon, cheese, mushrooms, peppers, etc.

    We're mainly vegetarian but will eat chicken/prawns once in a while (mainly because it costs so much to eat them they're a rarity!)

    So, we will have

    Pasta with tomato & mediterranean veg sauce
    Asparagus and mushroom risotto
    Greek mezze (houmous, olives, breads, oils etc)
    Tapas style food (patatas bravas, courgettes baked in cheese etc)
    Pastryless quiche (spinach, mushroom and feta is a favourite)
    Big salads with bread
    Vegetable stir fry
    Vegetable curry

    The list is endless :) x
