My favourite salad in the world...

Water cress, a segmented grapefruit and a grilled duck breast, rare, sliced, still hot. A perfect salad for cold evenings.

I make my OH grapefruit sorbet - usually with pink grapefruits but ordinary ones work the same. Make a sugar syrup, add the grapefruit juice and freeze in a plastic tub, getting it out every hour or to stir to distribute the ice crystals til it's frozen through.
