Need to bake 300 scones v.v. cheaply

    £100 for 300 scones. Ouch

    Just working out the cost to make:

    Tesco value flour: 5 bags £3.75
    Tesco baking marg 2 blocks £ 1.40
    Tesco milk 8 pints £3.04
    Baking powder 37p

    Total cost of ingredients for basic scones: £10.56

    I would be horrified to pay £100

    My advice would be to get out the food processor and make the scone mixture in advance and freeze.

    So for 1lb s.r. flour I would add 2 level tsps baking powder and process with about 4oz marg. Repeat this step 9 times. (I reckon 1lb flour will make approx 20 scones). If you then freeze in big boxes or bags, you can get out of the freezer an hour or so before you want it for the next step.

    When you actually want to make them then get out of freezer and a bit later, add the milk and rollout thick to make scones. I can usually fit about 12 - 15 on tray and they take 10 mins to cook.
    So 2 shelves in oven is 30 at a time

    10 trips through the oven a couple of hours at the most.

    The actual baking of them isn't that major a problem. School have a fully functional industrial kitchen so the actual cooking of them won't be too bad, 6 shelves to an oven... I probably can't roll and cut them as fast as I can cook them. . Figure I can bake the lot in an hour, at worst an hour and a half. Theres also an industrial food mixer (like a mini cement mixer). Head teacher has okayed the use of the kitchen after lunch on friday which will make life easier and I plan on roping in lots of other mugs to assist.
