Do you have any blue cheese? I think that would make a nice sauce to go with it. And fry off some apple slices in a pan until caramalised in its own sugar to serve with it.

It's very traditional to serve boiled bacon with parsley sauce and new potatoes, so you probably won't go wrong with that. After consulting a couple of elderly recipe books the only other alternative for chops is:

    Spicy Bacon Chops in Cider

    4 rindless bacon chops
    100g sliced mushrooms
    50g demerara sugar
    1 tsp wholegrain mustard
1/4 tsp each grated nutmeg and cinnamon
    150 ml dry cider
    15g sultanas
    1 tsp cornflour

Place chops side by side in a casserole dish. Cover with mushrooms and sprinkle over sultanas. Mix sugar, mustard and spices and stir into the cider, stir til smooth, whisk in cornflour. Pour this over the chops and bake at 180 for 30 mins.

A variation on this would be to do it with red wine and caramelised onion instead of cider and spices.

Not a sauce but I did some the other day marinated in olive oil, soy sauce and a shake of chinese 5 spice. Left for 1 hour and then grilled

ive never used them but could you not treat it the same as gammon ie cheese sauce, pineapple, fried egg or even honey and mustard
  • Magpye’s recipe sounds fab and I would probably go for that on a time rich day.

On a time poor day I would probably augment a tin of beans with Worcester sauce, a little butter for rrichness and some seasoning and serve it over the well grilled/baked chops (with new potatoes perhaps OR chops the chops, mix with the beans and serve with rice or pasta).

It gives a kind of Spanish gammon stew flavour (the clove flavour from the Worcester sauce does it I think).

I got what I thought was normal bacon from the butchers yesterday, when I got home I realised that it isn't sliced thinly and is actually just two thick bacon 'chops'
What do I do with them? I normally grill bacon but they're about an inch thick so don't think they'd cook through

I cook them the same way I would cook pork chops, either grilled slowly or roasted in the oven. I like them with cauliflower cheese.

  • I cook mine in the oven too with a little water in the bottom of the tray so they don't dry out to much. You could also fry them gently
Blessed are the cracked for they are the ones that let in the light
