Or bake them in the juice from a tin of apricots in natural juice. Meranwhile fry and onion and a stick of celery finely chopped. 5 mins before serving, sprinkle with flour and use the bacony juices to make a sauce. Heat the apricots with the bacon chops for the last 5 mins. A splosh of sherry in the sauce is good.
This is adapted from a Geraldine Holt recipe for gammon - a much underated cookery writer IMO.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

I would go with grilling them with sausages, mushrooms, scrambled eggs, beans tomatoes and black pepper with hot buttered toast. YUM!
I love it when the bacon is thick enough to really get your teeth into

I've got a couple of bacon chops (they came in a pack of bacon offcuts, £1.50 from Lidl for 1kg, bargain!) out of the freezer but i dont know what to do with them. I was hoping some of you may have some suggestions, I was wanting to keep them whole and cook in some kind of sauce instead of chop them up. I did try the bacon hotpot which was lovely a few weeks ago but the weather isnt making me really fancy it!0
