  • Well! ... I smell like an old fish wife now!!! :eek: ... and yes, I did have a shower this morning :rotfl:

    I've just made the mackerel and horseradish fishcakes mentioned above, and I can't wait to eat them later :j

    I'm amazed at how many I made too! From about a pound of cold potatoes (I put them aside before mashing the rest for dinner yesterday) and four smoked mackerel pieces, I made 12 big fishcakes!!! :D

    They were a lot firmer today too, as I hadn't previously mashed with butter and milk, so I'll have to remember that in future although I've still popped them into the fridge until I cook them later on!

    :rotfl: Snap! We've just sort of had these for tea. Prepared the mash yesterday, skinned and flaked the mackerel....Where's the horseradish?
    Non-existent. Oh well I made do with tartare sauce. They still tasted lovely.
    Also my son only picked up a small pack of mackerel so I had a look online for some other potato cake type recipes and ended up with bacon ones.
    I chopped an onion and cooked in a little oil with a pack of Lidls diced bacon.Then I mixed in the mash and a beaten egg. I shaped and coated in breadcrumbs like the mackerel fishcakes and cooked them all in the oven.
    They were equally delicious and I shall definitely do them again.|
    I find the twinpacks of diced bacon at Lidls brilliant to keep in the fridge for things like this, also soups...lentil and bacon, and quiches.

    I'd forgotten about this thread.
    Just had some fishcakes for tea (not home made ones, but not "birds eye" ones either) which were yummy.

    I'll have a go at making my own tomorrow to freeze.
    I do have a few questions though.

    Does the mash have to be cold to make them?
    I think I read that it's equal quantities of mash/fish, but just want to make sure?
    can you use tinned salmon?
    I think I read that someone puts mayo in theirs, does it make a difference?
    How much seasoning?

  • Yes, tinned salmon works very well in them too! You can use basically any fish really, and add just about anything you want to flavour them!

    I had slightly less quantity of mackerel to the potato (about 300g I think) but then smoked mackerel is very strongly flavoured so they worked fine! I could have done with a bit more horseradish I think, but I only had a couple of large tablespoons left in the jar so added a bit of tabasco sauce and juice from half a lemon ;)

    They were yummy and DS ate three of them :j :rotfl:

  • Actually "cooked" last night for the first time in ages. I made fish cakes (used to do this as a student when I had more free time!) using mashed potato and some fried onions and tinned tuna mixed together and moulded to form “cakes” then dipped in egg, then flour then fried. I made four, was gonna stick two in the fridge then eat two last night. Did myself a ton of carrots too. Ended up struggling to eat one fish cake and left half the carrots. Think I need to focus on portion control! Also have some mash left over from the fish cakes so it’s going in the freezer!
    Couldn’t believe how long it took me to make, then to clear up afterwards. I miss convenience foods! I also have some bacon in the fridge for fried onion and bacon pieces, mixed into pasta with an egg. Kind of like egg fried rice (pasta) meets breakfast. Or something. Used to have this wth cheese and was yum years ago but I can’t eat cheese now.
    I’m remembering to put herbs in everything, it makes a difference!

    I do think I need to focus on quick to cook recipes though. I'm fairly chronically ill on and off and don't often have the energy after work to stand up for that long in the kitchen. Just wanted to sleep last night.

    The pasta will be quick though. And I can do egg fried rice too. I still have some bought oven food in the freezer but I'm going for a mix ad match approach. i've bought a pizza but will be making my own garlic bread. Going to attempt to make pizza next week maybe. :)

    I'm sorry to hear that you are chronically ill on and off :( It must be extremely challengingsome days to get much done. Keep checking the recipe section because there are great meal ideas there and some are very quick to make.

    Good luck with your pizza - they are fun to make ;):D

    Well done, 8pnoodles!

    I've read some of your threads and it's great to see you getting into the OS spirit of cooking and eating. It does take longer at first to make stuff but once you get into the habit you dont need to look at recipes, and if you make a double or triple batch, you can freeze a load, which saves even more time. I've found that the satisfaction I get from eating a meal I know is good for me, and cost pennies, is enough to spur me on. Plus it tastes a lot better! My OH refuses to eat shop bought lemon cake now that he's had my version!
