    As title. Just made loads of these for first time and due to getting out too much fish to make them with, have absolutely loads of them.. First lot for our tea is cookingg now. Sh0ould I freeze the others cooked or uncooked?

  • If the fish has been previously frozen then general advice here is that you can't re-freeze unless they have been cooked.

    Are they made with cooked fish? If yes you can freeze them now and fry them later from frozen,but allow a bit longer than usual to cook through.Open freeze them on a tray first,then bag them up and replace in freezer.

    Thanks.. The fish originally was frozen. then I cooked it in water to make the fishcakes. So I can freeze them without cooking in the oven?

  • This subject comes up a lot, I'm a bit more pragmatic than some others but in general if a foodstuff still has ice crystals in it or has been through a cooking/heating process after leaving the freezer then I will happily refreeze it. Bread and pastry can be refrozen multiple times but will dry out, veggies are usually good for a refreeze if they have not been too warm, ice cream never (you have to eat it). Soft fruit doesn,t do to well but can be used to make jam, but in general it won't kill you.

    People on boards like this one have little choice but to advise you to do the safest thing, we would hate for you to doing the Delhi Two Step because of our advice.

    I have been googling a lot on this subject and there is two schools of thought, one is chuck it out and the other is does it smell right, look right, feel right then refreeze it quickly. I'm lucky my freezer goes down way below -18 and is fanned, so I crank it up put a heavy baking tray on a shelf for a half our or so , chicken breasts will freeze in less than 10 minutes this way.

    If you think about fish, it is caught and frozen instantly on ship, then it ends up defrosted in a shop, how many of us keep fish in our freezers for a second time without knowing it has been frozen before? We have to be safe but I work on the basis of keeping stuff as cold as I can and will cut up partially thawed fish cut off what I need and get it back into the freezer, in general most damage is caused to cell walls being damaged by new ice forming again, So yes I would freeze raw fish cakes if they had never got very warm (frozen fish chilled tatties etc) or if the fish had gone through a heating cycle of some sort.
    The quicker you fall behind, the longer you have to catch up...

    Mr P,I'm pretty relaxed about refreezing foods,but I always ask if the fish I'm buying has already been frozen.Supermarkets(in my experience)label their fish stating if this is the case.If it's been frozen don't freeze it again unless you've cooked it.
