Hello,
you have a controller which is the main one you use to play games. But some games need a nunchuck which is basically another controller attached to the main controller. (In these particular games, they help you play better)
A controller looks like this:

A nunchuck looks like this:

At the moment you dont want to be paying more then £200 for a wii. This will include the console, instructions, wii sports and 1 controller. a nunchuck is an extra £15 (cheapest at places like gamestation.com and maybe try play.com too)
Some places offer package deals, so really you need to have a look at game.com and see if theres a game your boyfriend would like to have included with his wii. A good guess would be to get a nintendo wii package with mario kart included. I would highly recommend the game, and i cant get my boyfriend off it most of the time!

Heres one with a popular game at the moment (Because it includes a game the price is good):

The basic wii comes with just one controller and one nun-chuck and one game - wii sports. Wii sports is the tennis, boxing, bowling, baseball and golf game.
To play 2 player, you should get an extra conroller and nun-chuck - much more fun 2 player. The wii sports is a good start, and good for 2 player games and to see what the controllers can do. Other games really depend what you're in to - there are good puzzly, shooty, thinky and spacey games - there are plenty of review sites for games to look at.

The basic £179 pack can be played straight out of the box. As people have said, it contains everything you need for a 1-Player game, so anything else you want to buy is optional. It is useful to have rechargeable AA batteries so you can keep playing when they run out. If you are going to buy another wiimote (that's what the controller is called), it might be worth buying the game 'Wii Play' because that comes with a wiimote, so for about £29.99 you get the extra controller and a game.
edit: this package for £179 looks fantastic value if you can get it:

Best deals in the shops are probably gamestation. http://www.gamestation.co.uk/cat.asp?cat=wii&t=hardware
Don't get any of the deals with sd cards as you can get the far cheaper on amazon

Hope this helps
Edit: just looked in offers and found this if you are able to get this http://forums.moneysavingexpert.com/showthread.html?t=8791750 -
Hi, thought i would add my bit
if you buy a basic wii in the shops it should cost you £179ish, with that you get wii sports which has several games on it to get him going and one of each type of controller. this is enough to get him started. you will be able to play games together by passing the controllers from one to the other of you (apart from boxing or actually playing tennis agaist each other, you need 2 sets on controllers to do that)
If you want to play against each other then you need a second set of controllers. you buy them seperatly. one standard wii controller and then one nunchuck (the 2 types are differnet and you hold one in each hand)
Without buying anything else it would give him a start just to get the basic package and then decide what to buy next, my personal fav game is mario and sonic at the olympics, both me and my DD2 have a set of controllers and we have a great time competing against each other0 -
That deal at Asda looks brilliant! Two free games, can't go wrong - can always stick them on eBay!
When buying a Wii, I always recommend picking up Wii Play and a nunchuck. Wii Play is a selection of minigames which come with an extra Wiimote, so if you get the Wii, Wii Play, and a nunchuck, you've got full two-player controllage as well as a few extra games in Wii Play.
Why buy Wii Play instead of just getting a second Wii Mote? Because it costs the same - that is, when there is stock available. AHA! Took a little browsing, but here it is in stock for £30 delivered!
Asda Wii + 2 games = £179, Wii Play = £30, Nunchuck = £15, so you're looking at £224 for everything. I'm sure he'll love it, but if not, I'm single!
