If you have a Waitrose near you they've got a free recipe card for a corn bread which uses pumpkin flesh. I wondered if it may be worth scooping out the flesh and freezing it so I have time to source recipe for it. I tried a recipe last year with it but OH didn't like it so back to the drawing board methinks

Pumpkin puree freezes well, so don't hesitate to cook your pumpkin and then freeze the puree for later use during the winter.

Unless you're carving pumpkins for halloween, then it's easiest to keep them whole in a dry atmosphere (saves space in the freezer, etc).0 -

we are just about to carve some pumkins so the little ones can use them to get free admission to Chester Zoo:j
Howeverwhat can we do with the insides?
None of us really like pies or anything made from them, but we don't mind pumpkin seeds, can we dry them ourselves? and if so how?

I love waitrose recipes can you tell
The difficulty i think you will have is that once youve carved the blighter, you have to pull out the insides with a spoon, creating a mash like consistenc, so a coupole of these recipes wont work as you ned chunks ( ie the tartlets) or grated for the cornbread.
However, Ill be making up some of these next week, when pumpkins are cheap after the weekend:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

I've found the pumpkins bought from the shops for carving (got some huge one's cheap one year) were revolving, inedible, and pretty hard to chuck out or compost!0

I've made this thai pumpkin curry sucessfully over the last couple of weeks, whilst pumpkins have been cheap -

It's really great and I think it wouldn't matter too much if you missed some of the more exotic ingredients out (though you can get them very cheap in ethnic grocers, and lime leaves freeze really well) as long as you have the curry paste ( I used green and some extra tumeric instead of yellow) and the coconut milk.
I didn't have any seafood the second time, so I just threw in extra veg (red pepper, green beans) when I added the pumpkin.
Oh and I didn't bother with the Pak choi either time. And I used water instead of stock.
Hmm on reflection, I didn't follow the recipie very closely!0 -

I make roast curried pumpkin soup delicious!!- and make my own pumpkin seeds.
Get rid of all the stringy bits, put on a baking tray in a single layer at a medium temp and shake every once in a while till dry. I also put salt on them but you dont have to !0
