By the way - I have an abundance of lamb mince in the frezzer due to a tesco delivery error - lamb gives me tumy ache but my BF loves it, however, the only thing I know how to cook with it is shepherds pie and if he has to have that virtually every night for the next two months I suspct he may get bored. Any ideas for easy, freezable recipes would be gratefully recieved!

I'm sure you could use minced lamb in any dish you would normally use minced beef in......spag bol, lasagne, meatballs, meatloaf, mousakka.

Others will prob think of more, but those are the first things that came to mind.

Hi Superspam, Please could you post your recipe for Thursday - Garlic prawn spaghetti and salad (prawns from freezer). I also have some prawns lurking in the freezer and would like to use them up.
    Thanks

    No problem!

    Garlic Prawn Spaghetti for 2

    1 tbsp oil
6 cloves garlic, crushed - it sounds a lot I know, it is a very garlicky dish! You could reduce the amount if you wanted.
    1/4tsp chilli flakes
120ml white wine/chicken stock - either is fine
1lb prawns - recipe says raw but I use the ready to eat ones and just cook long enough to make sure they're warmed through
a handful of chopped fresh parsley
    1 tbsp marg
Spaghetti (recipe states 180g but use whatever you would normally use for two people)

Heat oil in a large non-stick pan and cook garlic and chilli flakes until garlic starts to turn golden. Add the wine or stock and bring to the boil. Add the prawns - if using raw they will need to be cooked for 5 mins or until pink and firm. Add parsley and margarine and as soon as marg is melted, add cooked drained spaghetti and toss together - yum yum!:D

Thanks kraftykat - so simple and yet it had not occurred to me!
  • My meal plan for next week... no chuffing idea!!! :o

I've been doing weight watchers for about 8 weeks but pretty much overnight I've lost any will power and motivation I had! I've got no idea what to make for myself and dd for the week!!!

Will have a good look through this board for lots of yummy ideas - problem is I keep getting distracted by the gorgeous cake recipes!!

WE made our own bases too and they are so cheap and much nicer than anything you can buy. REally easy too once you get the hang of it. You should give it a try.
