I always use Delia's crispy onion rings recipe, but I cant find it. I think you chop the onion, dip in seasoned flour and then dip into an whisked up egg white. Stick in chip pan for a couple of minutes. They are lovely and light and crispy.0

2 ways I do them.
First it to use the old fashioned BeRo recipe. Make a thick mix of plain flour and water. Dip onion slices in and deep fry.
Second, slice onions and boil for 5 minutes - drain and put back in the pan. Add some oil and shake the pan, then sift in a bit of flour and shake again - oven cook. I usually do this at the same time as oven wedgies.
Both are lovely0
