I might just change and see if anybody notices hehehhehe
The Sky family pack has gone up from £19.50 to £21 a month.
What I want is to be able to add one single channel, sky sports 1 and pay the difference without paying for a whole new package of things I don't want, but that doesn't seem possible...does it?

Dropped mine down to two mixes at £15. It means I don’t get the Sky magazine anymore – bonus!!

Soo
You are now on the 'Entertainment Pack' which as you say is £21 per month. If you add Sky Sports 1 (with which you would get Sky Sports 3 as a bonus channel) you would be paying £32 per month.
Or you could drop 2 'mixes' and pay £30
Or drop 4 'mixes' and pay £280
