    tuna cheesebake - 1 tin tuna, 1 small tin sweetcorn, about half a pint of homemade cheese sauce mix, stir it all together, add about 2oz grated cheese and a crushed packet of whatever flavour crisps you've got left over, sprinkled over top. Cook in hot oven for about 20 minutes, serve with rice or jacket potatoes. (Takes about 10 minutes to make and costs about £2.00 with rice and serves 4)

    Oh that's easy then. Beans on toast are cheap and good for you. Cheese omelette, devilled mushrooms with rice or toast, tuna and pasta bake, spaghetti bolognese, corned beef hash, potato pie, scrambled eggs, homemade burger and oven chips, hotdogs, mushroom risotto, homemade chicken pie, pasty, cottage pie, fried rice, pork caserole. One portion of all of these can be made for less than one £.

    Sausages/fish fingers/ value pizza's.....very poor source of protein, can anyone suggest stuff that is a bit healthier

    I just made a huge pan of spicy lentil and veg soup. Cost about £2-3 and there was enough for about 8 people. I usually serve this with hm bread at about 25p per loaf.
    Basically I chopped up a few onions (10p?value asda)
    about 8 carrots (20p?)
    about 3 leeks (80p?)
    2 large spuds diced (10p?)
    4 stick of celery (40p?)
    Fry this all together in a little oil for about 5 mins
    add whatever spices you like(1-2 tsp asda medium curry powder is pretty good)
    pour over stock (made with value veg stock cubes 5p?) enough stock to cover all the veg and a bit over.
    Add tin of toms (19p)
    I then added about 2 large cups of red lentils (20p?very cheap!!)
    simmered for about 20 to 30 mins.Just before it was ready I threw in some fresh chopped tomatos that needed using (30p?)
    When cooked use a stick blender to wizz it up!! but dont overdo it ..its nice to keep some chunks!
    as you can tell I cant work out the exact cost because I just use whatever I have in before my next shop. But my whole weeks worth of fruit & veg costs less than £10 so its very cheap (local market).... Plus I never follow recipes as I always have something differant left in my fridge!!You could make this with whatever veg you like .

    No - don't usually go to Tesco :D - but was in ASDA at the weekend and got some 8p noodles (curry or chicken flavour) for the first time.
    Not sure if they're similar to the Tesco ones but me & OH tried the curry ones and really enjoyed them (haven't tried the chicken ones yet)

    I think cooked-from-scratch nutritious meals for under £1 per person are extremely plentiful and easy... if you have a freezer with space in it.

    IMHO the sort of person who's likely to think about things in terms of cost per single portion is often going to be a student (ahhh the days of Baby Bellings and a freezer stuffed with other people's junk!) or somebody living in a bedsit or basic studio flat without necessarily any mod cons.

    But if you can freeze stuff, the possibilities are endless - thank heavens for batch cooking and reduced-to-clear fresh meat! I usually don't even think about how much my cooking works out at per portion, but I'd guess it's very rare that it comes to above £1. In fact I suspect most of the time it's a lot less.

  • This is very quick and delicious (but again it serves 4 so is economical if you're cooking for 4 people)

    1 x 'own brand' tub garlic and herb soft cheese (Tesco is 65p)
    1 x 250g pack bacon -chopped up into bits (value unsmoked bacon .80p)
    1 tin chopped tomatoes (21p)
    Mushrooms 250g -sliced into chunks (.79)

    Pasta Twists or any pasta - cheaper the better

    Fry all ingredients except pasta - stirring in garlic and herb cheese last. Pour sauce over cooked pasta.

    Approx £3.00 and serves 4.
