Christening Buffet ideas?

I have done loads of buffets and I have to say I have never ever made sandwiches. I usually have a selection of picky things for the kids, ie cocktail sausages (by the truckload), crisps, pizza (homemade), mini vol au vents (either stuffed with chicken or savoury mince), I usually do a ham (glazed, so simple its untrue).
In addition here is a list of things some of which I dare not miss out as they have become firm favourites of my guests.
Coronation Chicken (Really easy)
Potato Salad
Baby Roasters
Chilli
Spinach and Ham Quiche
French Sticks
Fruit Trifle (Have to do this for my mum)
Ginger Trifle (New to my repertoire but gorgeous and simple)
Tiramasu (Authentic and much simpler than the recipe on Tesco Mascarpone lid)
Jelly (kids love it)
Pavalova with a difference (I make a mousse out of cream, caramel bars rather than just plain cream, topped with red fruits and shaved choc)
Ice Cream (for kids)
There is not usually much on my table that is not homemade, I am in my element when cooking for functions like this. Unfortunately at this time in the morning thats all I can think of.
Hope some of these ideas help.

great ideas above.does anyone know how to make the potato salad and perhaps a pasta salad.i think its pasta and maybe tomato sauce ????0

Potato Salad is easy... boiled taters... cool 'em. chop 'em into lumps that look about right... coat them in either mayonnaise (any darn flavour you like) or salad cream (YUK).
Did I say YUK? Sorry.
Mayonnaise takes other flavours VERY well (unlike salad cream >> <spit> Oh, by the way - did I tell you I used to make mayonnaise for a living?)...
..so you pick any herb, or garlic, or chilli powder, or (cream/blue) cheese...
.. add tiny amounts of it to the mayo... and there ya go --- INCREDIBLE potato salad.
Pasta? Any old pasta with any old sauce from a jar will work a treat. Not just PASTA sauces... ANY sauce. i make my potato salads with new potatoes boiled until cooked. Cut into quarters left with the skin or not (depending on what you want)...Put some finely chopped onion, grated cheese and mayo. then season with salt and pepper according to your taste....with the pasta salad, it can be a variation of the potato salad. instead of putting new potatoes use pasta twists. Add either chopped bacon or chicken breast cut into small peices... I do hope this helps this is just my basic recipe for such that I usually do for BBQs and during summer for just a quick and easy, light meal.Sealed Pot Challenge 2012 #1502:)

buffet suggestion (finger foods):
Spring rolls (vegetarian and meat)
Vul au vant (As have been previously suggested)
Hotdogs on sticks with a marshmallow and a pineapple cube - this is well loved by kids...
Vegetable sticks (carrots, cucumber, celery and peppers) with some salad dips
fairy cakes
different nuts ( roasted, flavored, spiced, etc...)
Chicken lollipops ( this is made with chicken drumsticks. marinated in lemon and soya sauce with some pepper. The chicken drumsticks is cut at the base and flesh pulled back a little towards the fleshy portion to get that lollipop effect.)
Ham rolls - we make this with a flattened white slice of bread...Ham and cheese place in the middle and rolled. Then it would be dipped into beaten eggs and rolled into breadcrumbs then fried. You can the slice it into two...)
Mini sausages wrapped in bacon ( what you call pigs in blankets?)- you could also provide dips for this...
Peach or mango float - you can put this into tiny cups or ramikins to serve....This is made with peach or mango slices (depending on what you want..) Double cream whisked then add the condense milk. Put the fruit first then the cream and milk mixture. You do this in layers...then serve with grated mild cheese or grated white and brown chocolate before serving....
I hope this helps...This are just some of the things that I do when it come to serving finger foods...It varies depending whether you can bend backwards and consider the guest using cutlery...Sealed Pot Challenge 2012 #1502:)
