I think you will need to par boil them 1st.0

My Mum told me that they are the only veg you don't have to parboil/blanche. Have peeled and chopped them only then put them straight in freezer ever since and she is absolutely right. Good old Mum.0

That's handy to know. Will give it a try. The OH hates carrot, so if I can find away to sneak them on every meal it will be fun.0

I don't blanche anything I freeze. In it goes!0

I cook carrots for a few mins before freezing - but that's because I usually misjudge the time they take to cook and end up with crunchy carrots (which OH doesn't like)
If I boil them till they are nearly cooked then I can just reheat them in the same pan with the frozen peas

Hi Pinklady,
I always blanche carrots before freezing them but others don't and say they're fine. There's an older thread on freezing carrots where you can read what everyone else does so I've added your thread to it to keep all the replies together.

I have a big sack of carrots which I havent managed to use and I'm going away tomorrow. I don't want to waste them - could I freeze them, and if so, how?August grocery challenge: £50

I'm sure someone will be along with advice on how to blanch and freeze carrots but how about some lovely creamy carrot soup? It is yummy and freezes well....
For every 6 carrots.... one potato, one onion, chick/veg stock to cover, (parsley if you have any) simmer one hour, blend and add a little whole milk or cream before serving! Simple but good HTH xx0
