What sort of damage could of happened over 3 weeks, around 700 miles of driving a turbo diesel with quite a bit of oil overfilled and what damaged wouldn't be noticeable until later in life?

Depends on how far overfilled it was. No damage at all if it's only overfilled a bit (I'd say up to 20mm extra on the dip stick, maybe even 40mm). It's just a splash bath in the sump. It's when the oil starts working up into the space under the pistons that damage is done, but it's normally very quickly evident.

Excess oil can render a catalyst useless very costly to replace.

    Unlikely in a Diesel though.

recently I find out it was own by a rental company before which I was not told about..

All of the cars sold by the Carshop belong to leasing companies and the like. There isn't usually any problems buying these cars as they are usually maintained fully by the leasing companies.

but I have been down to Ford and they say that the warranty is void because the car has not been service stamped, only wrote in ONCE.

This does not invalidate a warranty. Only if the item failed is a serviceable item. eg. oil leak from an oil filter that would have been changed on the service which wasn't done. Anything else is covered providing you are within mileage and age perimeters

I also got a bit of paper that said it had been serviced so many times but on of them is 1 mile less after 3 months but my little brother could of probably done a better job of printing the service history out.

Usually these print outs are supplied by the leasing/renting companies so you can't really blame the car shop for that.

Not sure about your oil problem though. Did you explain the problem to them. Wouldn't they look at it for you?
