Where do you get the pigeon from and how do you cook it? I have had it before but just picked at it but I know someone who eats the bones too...is this normal?

My DH "acquires" the pigeons, in a legal manner IYSWIM (if you don't, PM me and I'll spell it out). We remove the feathers and skin, and then just cut off the breasts. Sometimes I make a stock and gravy out of the gutted carcases. I wouldn't eat the bones
DH browns the whole breasts with chopped streaky bacon, shallot, celery, garlic, carrot, herbs, peppercorns, then adds stock and cooks in the range until the meat is tender (about 1 hour). It has a gamey flavour, somewhat akin to liver.

I always use a roasting tin as I find the oven dishes dont get as hot as I would like. It can be done though, but I find the batter doesnt rise as much.
Good Luck!

It's true that the batter rises better in a tin but I do mine in a prex dish as I haven't had the opportunity to get a roasty tin yet. They turn out fine....mental note to look on EBay0
