julie - for your mate - no idea re milk but my DS was mega fussy on proper food from 15 months til about 4. When he was 2 1/2 I was at end of my tether and got advice from HV. Your mate's boy is prob a bit too young for a lot of it but one thing that helpe my DS was to be involved in food preparation. V messy etc but it did get him to eat more.
So like he would help by:
- whisking the egg for scrambled egg (well stirring with a fork LOL)
- scraping beans out of tin into pan (under my supervision of course)
- sprinkling toppings on pizza
- getting the fishfingers out of the box and placing on the grillpan
For lunch he would have a sandwich which was basically I would give him two bits of bread some chopped ham and grated cheese, a dollop of marg on the side and a plastic knife and let him do it himself. Badly of course. And he usually just ate the marg without even spreading it yuck but some of it went in.
If there are things he def likes then perhaps just stick to those for a while and not get too hung up on variety. Small portions so he isnt intimidated by whats on the plate. We found that if he ate a tiny portion and we heaped on the praise that would help and he may even ask for more.

Juliejim - fruit salad will keep for a couple of days in the fridge, cheese cut into sticks, cream cheese and breadsticks/or carrot batons. Cheese on toast. Sorry they were just off the top of my head.
dd1 was especially bad with "eating" and would happily graze all day rather than eat set meals. She would also drink loads of milk (or fruit juice) imho this was because it required no effort (i.e. chewing, holding fork etc) for her to feel "full" We curtailed her milk intake to whatever the recommended limit was back then and she started to feel hungry and made more of an effort to eat.
dd2 was similar however I managed to get into the habit of letting them all "help" making supper even if it was just putting some grated cheese on top of a cannilloni, swishing the tomato sauce on a pizza base, choosing some fruit for the fruit salad. I think the "interaction" with food helps a bit - i.e. the 1st few times I made HM pizza the little people hated it - it wasn't the overprocessed junk they liked  So one day I set up a bunch of bowls gave them all a base each and let them choose what went on top of their pizza. That night they were all "delicious" and eaten with minimal fuss (there is always fuss!)
oh gosh I bleathering on hope somethig in there is useful - although I do remember that ds who ate well as a baby and eats well now was a nightmare with food around the age of 2... when he was getting to grips with the whole asserting himself thing...
ETA - they ALL would eat yougurts like there was no tomorrow - the same as milk - no effort and full tummy. lo still askes for milk at bedtime (in bed!) big girl by day and telling me she is a baby at night! (and the reason she askes for it is because she is "hungry" - she is learning to eat more at suppertime and has a big breakfast...)0 -
Just spent 20 minutes in the garden, cut the grass back and front and swept up. Looks better but it really set my cough off. I'm hot and breathless now and not in a good way!0

ORF is Operation Red Fiat - Soappie has a camera trained on her drive at home to find out who has been parking on it while she is at work. Some of the flyladies access this over the web and watch what's going on. So you may read ORF updates or Buster (which is soappie's name for the camera) throughout the day!
