Easter Sunday Lunch?

Thank you for your replies, my OH likes the sound of the sinye so i'll definitely give that a try - thank you galileo74. Baking is my thing and I always make a Simnel cake, this year the children and I are making Easter Biscuits for presents too so we're ok in that area. The only problem I've got with chicken meritaten is that I'll need about 3! I could do chicken pie with roast potatoes, veg and gravy, is that special enough?

Hiya
i would say cook what you are comfortable cooking and don't get yourself in a pickleChicken pie roasties and veg sounds fab - who is going to complain?
There is an older easter sunday lunch thread you can read to see how others do it.
Also what are you doing to make easter sunday special may also be of interest
i know it seems strange to link to a christmas thread, but if you look at the very first post, i collated loads of up to date roast dinner links - so have a read in there as well for loads of links. Sorry im short of time or else id sit and pick you some out.
Don't stress, enjoy the day, prepare well and i'm sure it will be fantastic
ill merge this later on .

This ^^^^^^^ :T:T
In fact, I think that it should be adopted as a mantra for anyone who is cooking a 'special family dinner'
Hope it all goes well for you, Pinwheel0 -
Why not roast a load of chicken thighs with lemon wedges and rosemary (I think Nigella has a recipe for something like this) it'll be cheaper, easier and quicker than whole chickens and much easier to serve with built in portion control:D. You could roast a tray of mixed veggies at the same time.I was off to conquer the world but I got distracted by something sparkly

so do 3! small ones! if thats your only problem then its easily solved! in my view when catering for the hordes its better to do three or four whole chickens than try to carve up 2 large ones. it looks better served up when there are lots of chicken legs and breasts and wings. you dont have to do them all in the oven at the same time! just warm up pre- cooked chicks! make the gravy from the last cooked chickens. easy!0
