Easter Sunday Lunch?

Was hoping to get some ideas for a nice lunch - I have invited the :eek: grandparents (x3) and will prob also have :eek:bil and his girlfriend as well as me, dh and ds (age 3) and dd (age 1) so potentially 7 adults and 2 toddlers. (This is a huge anount for our small house (have done it for christnas before but thats it!)

Not sure whether to go for roast dinner (prob chicken) or something different, would prefer something easy so not spending wole time in kitchen... Basically I want to know what you are doing for Easter Sunday and to pick your brains for ideas.....

    I would suggest some thing like lasgane or a canneloni or a pancake canneloni you can make the night before and stick in oven

    If you want any recipies im sure i can sort one out for you .


    Then serve them with crusty bread and green salad .

    and the toddlers can eat it too

    It's traditional to do lamb, how about a slow-roasted shoulder?
    If you want it really simple roast lots of veggies underneath it, but don't forget to cover it with foil to keep it juicy.
    Jamie Oliver has a lovely recipe - but I'm at work so can't supply details ;)

    Tesco just been advertising that Lamb is on special, less than half price so that may be worth looking at. Also Sainsburys have 1/3rd off Pork,Beef and Lamb at the moment. Hope this helps. We have friends coming over for Easter Sunday dinner so doing a full Roast, having a Duck that I bought last month when that was on special in Sainsbury's.

    if ur gettin oldies for dinner has to b something traditional a nice joint of meat roasted slow in dish with veg etc under it all juices run on to vegies and u have lovely gravy as well good luck

    Pork and lamb are not favourites in our house, and pasta is not a favourite with guests.....why I was thinking chicken.. But thank you for all the ideas. Any more.....?

    How about a casserole? Can make the day before and just reheat, so minimum stress. Also, a pudding like a trifle can easily be made the day before, then served up the next. Old fashioned, but who doesn't love trifle (especially the boozy bits)?

    You would need more than one chicken to feed nine people, so if you are still thinking of this, make sure your oven will cope with two at the same time! Unless you meant chicken portions, of course.

    Last year I did Nigella's ham in coke, served with roasties, cauliflower cheese and carrots. I did the coke simmering bit the night before, so that helped timewise. Or you can fit two chickens side by side in a roasting tin - I often do this. I would put half a lemon in the birds cavities as this (on my planet!) makes it seem more "springlike"...

    This year I think it will be pork if the family come around, as I have got a RTC bargain stashed!

    Thanks everyone for your ideas...still can't decide though. Fish isn't an option for us, and I can see the ease of a casserole but still not sure thats for us. Wondering about maybe doing steak and crusty bread and salsad and new potatos/chips at mo...sort of hot buffet...what do you think?

  • Could you perhaps roast a couple of chickens the night before and then serve them cold with different salads and crusty breads and - say - wedges? How about a trifle for dessert? That can be made in advance or just ice cream and chocolate sauce or something.
