I don't tend to over whisk mine. I do it until just mixed and no more. You can whisk TOO much you know!
For easy recipes have you tried twinks hobnobs yet? or my snickerdoodles?

Another thought has just occured to me............
When I've had a family size tub of yog to use up I use a cup as my standard measure for all the ingredients. You could try that in future?
If you us the family yog pot you'll nedd to split the mix into 2 tins, thats maybe why your cake neede a bit more cooking and was so high over the tin.
