Squeaky/Pink/Gingham

Ingredients
8 oz plain flour
4 oz sugar
1 teaspoon bicarb soda
1 teaspoon cinnamon
1 egg plus 1 egg yolk
1 teaspoon vanilla extract
4 oz butter
2 oz walnuts
4 oz dried fruit ( currants raisins or cranberries, I use a mixture of al)
Grease 2 or 3 baking sheets
In a food processor sieve flour, bicarb and cinnamon.
Add sugar eggs, butter and vanilla.
Whizz until blended.
Add fruit and nuts, whizz until blended.
Roll into 2 logs and chill for at least 15 mins
slice each log into approx 12 pieces, roll pieces into balls then place on baking sheet. Flatten with a fork and stick in fridge until chilled for at least 15 mins. This stops them spreading out.
Bake in oven at 180oc for approx 15 mins untyil they are golden and crisp. Allow to cool on trays and then let cool completely on racks before storing in an air tight tub.
Makes approx 2 dozen
These are nearly as good and as quick to make as twinks hob nobs
