    that sounds more like a caramelised red onion relish, if there is no vinegar in it, it wont keep
    recipes like that are usually only for small amounts, you eat there and then
  • I have a recipe for carmelised onion chutney and i want to put it in my hampers. At the bottom it say can be left 4 - 6 weeks to develop flavour, does this mean if i make it today it will taste best at christmas?

    Also how long will it keep in a jar? just so i can make labels.

    i have a search for the answer but there is just too much info to get through

    Yes it will certainly keep until Christmas, and I would say for about 6months afterward in the fridge.

    Hi Lisa,

    I find chutney keeps almost indefinitely as it's a preserve. The recipe I use contains sugar and vinegar and as both of these are preservatives provided it is stored in sterilised jars it's unlikely to go off before it's opened....in fact it improves with age.:)

    Oh brilliant. I ate mine all up thinking it would go off in a couple of days. It was lovely though, sugar and red wine vinegar so definitely a preserve. Doh.

    I will make more for Christmas day evening picnic, sweet pickle, cheese and onion chutney, especially as the taste will improve :)

    Hi fuddle,

    A lady I met at work recently encouraged me to try her seventeen year old chutney. _pale_ I was a bit dubious but didn't want to offend her so I tentatively tasted a tiny bit. It was fabulous!

    The oldest jars that I have on my preserves shelf was green tomaot chutney made in Autumn 07. I opened one recently and it's absolutely fine. So go and make some more and leave to enjoy at a later date. :)

    Thank you Pink-winged :) I think I would think twice about trying a 17 year old chutney too but a preserve is a preserve I suppose. So pleased it was lovely. The one I made was delicious that same night so cannot imagine the taste delight awaiting me in a couple of months :)

    quintwins I didn't mean cheese and onion chutney, I meant we have sweet pickle, cheese, onion chutney buffet... pate, cheese biscuits, pickled onions and left over turkey too. Really sorry I didn't explain myself properly :o

    I'm a novice in this area but I've had aesthetic issues with this in the past, which obviously may be a problem if you are planning to give these as gifts.

    I think it's something to do with the sugar separating and leaving a 'scum' on the top. Once stirred in it's not a problem and taste isn't affected. Hopefully someone with more knowledge in this area can advise!
