i have looked through the soup index as it was all I could think to do with fennel??? I had an organic veg box delivered and it contained Fennel which I have never had before so unsure what to do with it. I also had a pumpkin and spinich (well think it is - looks like the baby stuff you get in packs in the supermarket but about 5 times the size). could i make a spinch, fennel and pumpkins soup??? would the combination work??

I am not the worlds bet cook but I am sure you can braise fennel and use it as a veg accompianment (if thats a word!)0

If I had these Items I would make a soup from the pumpkin. Roast the fennel and have with fish and wilt the spinach and use it as greens. I also use it in place of lettuce sometimes for a salad. I am sure there are people with far more ideas than me. It is all down to personal choice at the end of the day.0

Fennel has a lovely, strong aniseed flavour. It's nice raw in a salad (trying grating it or chop into small pieces).
You can also roast it with other veggies - I do aubergines, courgettes, red onions, fennel, tomatoes, garlic and various coloured peppers. Drizzle with olive oil, grind some black pepper over and add herbs - fresh rosemary is nice. Slice your fennel and braise in the oven in stock. It's lovely, similar texture to celery but aniseed flavour.
Spinach is lovely just wilted - wash it and shake off most of the water, then put it in a pan over a high heat and just let it wilt. Don't overdo it, it will only take a minute or so. Melt a knob of butter into it and a grind of black pepper, and serve as a vegetable side dish.Official DFW Nerd No 096 - Proud to have dealt with my debt!0 -

I have had fennel in my veg box this week and i have never even seen one before let alone cooked one lol
I am slinging a load of stuff in the slow cooker this morning....will fennel be ok cooked like this?? Or am i better off roasting it or making it into a soup??

I roast mine...............Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.0

I like fennel in the slow cooker. It gets really moist in stews and adds much to the flavour of the sauce.May all your dots fall silently to the ground.0
