We've always found it cheapest to book flights and acc separately. If you're not fussy where you go search the flight checker for cheap flights and see what comes up. I'd recommend barcelona - or rome - but barcelona has a beach and is a fantastic city so you're getting the best of both worlds. If you are planning on taking your son there is also an aquarium, great big parks and a very good zoo.
I've been twice and loved it both times. If you go to either barca or rome in May it will be hot.
When we went to Barca we got flights for £1 (plus taxes) it just means you often go midweek for 4 days or something - can rarely get weekend flights cheap. You will then find masses of half decent hotels for around the £50 per night mark. We stayed in an apartment as we had our son with us and it cost us £150 for 5 nights, it was very nice in the gothic quarter. i think our entire trip cost around the £250 mark - plus spends. I've also been with the girls for 3 nights and that cost £100 but there were more to split acc with.
tbh i'd rather do that then at least you know you're staying somewhere decent - rather then book a 3 star hotel which might be rank (not that they all are -I've stayed in good 3 stars but sometimes with package holidays it can be hit and miss). If its your honeymoon and your only hol for a while you want to really have a great one!
I'd recommend tripadvisor for finding hotels - or search the web for apartments.
The other alternative is a 'holdiay park' abroad. Like centreparcs. There's a thread somewhere about ones in Scandinavia I think, that are meant to be v good and v cheap. We're staying in one in Spain (we fly to barcelona) with our boys in the summer and it looks absolutely beautiful with pools, woodland etc but its costing us £500 for 10 days in the summer hols so I imagine for may it would be much cheaper. Google europarcs and it should come up. From there you can do daytrips to barcelona, salou, fort adventura etc.

ps just read you'd consider august - we went to rome last august and it was hot. there is a beach about an hour away - not sure what its like as we didnt go but there did seem to be some lovely resorts outside rome so between city and beach. again we got flights dirt cheap - you just have to book them as earlier as possible as I've seen them rise from a few pounds to over a hundred £ closer to the time .MANAGED TO CLEAR A 3K OVERDRAFT IN ONE FRUGAL, SUPER CHARGED MONEY EARNING MONTH!:j
