    What needs to be emphasised is the wonderfully therapeutic catharsis that goes with the kneading of dough.
    As une petite femme, I find it entirely pleasing and un-clockwatching or wearisome to do the required kneading with the bowl between my knees at lap level, on an old low stool/outdoor table/whatever.
    I've tried it in sink, on bench etc. but these ways require arm lift and awkwardness.
    I can do it outside on a nice day.
    Honour compels me to note seeing Bread Machines @ Mr T for £24.95 yesterday, but my distant experience of them was disappointment at the hole in the bread, messy cleaning, slowness.
    Please make your bread by hand - it's quick, simple, gorgeous.
    Throw in all sorts of seeds. Mix/Vary proportions of different flours.
    I've always used bread flour, though and the eggwash brushed over, or brine, will give you a crusty crust! The former makes your loaf glossy.
    If you have a hot-water cupboard, your dough can rise in there - beautifully.

    Many thanks for the tip re yeast in supermarkets - have just been to Tesco's and been given a huge big slab - weighing in at 8 oz! Bread is rising as I type! Didn't feel at all awkward asking, although I probably should, as I didn't do any other shopping in there! How's that for moneysaving!! :-)

    I don't have time to faff too much in the kitchen so rely a lot on one pot meals/slow cooker etc and though we do a lot of baking I don't want to make bread from scratch by hand as it's just another job.

    However, I find that if I set the B/M to the dough setting, I can make little rolls with the kids and they only take about 15 minutes in the oven. It's a nice game to play when my 4 year old has friends over too - they can all have a lump of dough and make shapes/animals, leave to rise then eat the results after a quick blast in the oven while they're cleaning up the flour!

    If you like wholemeal bread it ispossible to make lovely bread that is not kneaded. Jusr make the mix and put it in the lined tines, leave it to rise and cook.

    Bread is so much cheaper. I bought a loaf this week and it cost over £1.20. This buys me enough flour to make 4 large loaves, - oven on for one hour.

    Cheaper and nicer. I made scrambled egg and tinned tomatoes on toast with the expensive bought bread. The juice from the toms turned the toasted bought bread into slime - eeeugh!

    Bl00dy brilliant thank you so much, never even thought of that.
    Well we did ds made a nice bread roll,which ended up huge so hes been picking at it all weekend.
    I made a roundish loaf which went down well with my homemade soup

    I will be trying this shortly - didn't know, but WAS given, also free, a 500ml tub of the gorgeous sesame coating which they use on their tiger rolls.
    The smell of this, fresh from their bakery, is :kiss: DI-VINE:kiss:.

    Well well well.....made the bread - it rises much quicker with fresh yeast, and smells GORGEOUS!!! I let it rise twice, and sprinkled the top with sesame seeds (great minds, ampersand!). It is the best bread ever! I felt so proud when it had finished, and started thinking about how 3 basic ingredients can become bread. I know it's not magic, but it comes close! I will be experimenting often, so will post back my findings in due course! First one, prosciutto bread.....mmmmm....
