If you fancy reading a funny yet enlightening cult (well, amongst online geeky circles) experiment surrounding the poached egg issue:
http://www.b3ta.com/features/howtopoachanegg/
It explores the virtues of various poaching methods, and will make you laugh along the way :P Although, I'm afraid one conclusion reached is "Delia is an idiot"!!
That is awesome!0 -

I always ask for poached eggs when the OH and I go out for dinner, out of the 7 places we've tried on my road, only one of them managed to get it right and that was the pub over the road, they were perfect michilin star ones mmm.
Thanks for the advice so I can make them myself now, I'm going to try the ramikin method as mine always end up very wispy. OH will be pleased when I start making him brekkie in bed at the weekends too.SPC = £15.54 #1413

Anyone know how long they should cook for in the clingfilm?0

Lakelands poachettes are good (if pricey) only need to be done for 6 minutes if very large eggs (I found 5 minutes was plenty). Poach pods (or any cheaper silicone version does just as well) need to be in a shallow pan with a lid & simmered for 5 minutes. The cling film version is good but difficult to know when the white is done but the yolk is runny 3 minutes or so I think.
Definitely do not bother with anything other than very fresh eggs AT ROOM TEMPERATURE.Truth always poses doubts & questions. Only lies are 100% believable, because they don't need to justify reality. - Carlos Ruiz Zafon, The Labyrinth of the Spirits0 -
The poach pods work well if you put a lid on the pan to contain the steam and cook the top. Mind you they are expensive if you can't get hold of them for 20p in a charity shop like I did"Life is not about waiting for the storm to pass...it's about learning how to dance in the rain." ~ Vivian Greene0

The best way to make a good vortex in the water in the pan is to do it with a whisk. In my experience this way keeps the egg all together.0
