Using Up Bread - bread & butter pudding etc?

My freezer just defrosted itself :eek: , but luckily after I spend tomorrow jamming the fruit that was in there and bake a couple of pies, there are only a few loaves of bread that are unsalvageable, so I need some ides.

I reckon after taking sandwiches into account for a couple of days (before it goes furry), I have about 2 brown loaves to use up.

I have a bread pudding recipe that I can do and use in packed lunches, but my bread and butter recipe isnt so good - asks for 4 eggs, and makes it way too eggy - so has anyone got a nice recipe out there I can try? :)

Or any other ideas? Also, will using wholemeal instead of white bread affect the recipes? :)

I'm assuming I can't refreeze anything I make from all this

    What a bout a summer fruit pudding? Don't know a recipe but saw it on come dine with me this friday so you could find it on the channel 4 website (think it may hae beeen on more 4 it was set in Derby i think)

    Thanks for the idea ecoelle - unfortunately the kids aren't so into fruit that I've ever got a summer fruit pudding down them, lol. I also don't really want to have to buy ingredients unless I can help it.

    Squeaky - thanks again - both those links take me to the same place - some nice ideas, but many of the actual recipe links are dead :(

    Done a search of the board, but not much else showing up (unless I've missed something) - think I'll have to hit Google

    As for the various links - well, tempus fugit and all that.

    A search on bread pudding pulls up a few threads; the best being:-

    My cashew nut loaf recipe uses about 8oz crumbs, shout if you want it.

    Google " Savoury bread and butter pudding" for loads of ideas. I think that the cheesey ones are really good with a tomato salad or a seasonal green veg such as sprouting broccoli.

    *sigh* I'd love to make a b&B pudding tonight - never made one and after reading this thread would love to...my only prob is I have no dried fruit/sultanas/raisins OR marmalade/choc spread/jam etc to liven it up.

    Only things I have left are as follows - can anyone give me b&b pudding recipe that would work with any of this stuff?

    Bread
    SR Flour/Plain Flour
    Eggs/Milk/Butter
    Sugar
    Leftover coconut milk (about 3/4 tin).
    fresh pineapple chunks
    apples (not cooking)
    Bananas
    Kit Kats
    Butter

    How about using pineapple chunks cut small and possibly banana instead of dried fruit and peel and use coconut milk instead of milk and cream to make the custard (make up amount with milk if necessary) instead .
    It could be a pina colada bread and butter pudding!

    Earthmother as far as I am aware Bread is one of the few things that you can refreeze without it becoming a threat from food poisoning.So I'd just bung them back in the freezer
