  • Yasmin, how much water please? And does it freeze? That soup sounds souper!

    I go by taste not exact measurements sorry I am so useless. However I have a normal size kettle and I tend to fill it up boil it and pour it in. If it doesnt taste quite right add a touch more stock. It has never failed to satisfy yet. Its one of those rare dishes that does not sound very nice until you have tried it so can really impress. Yes it does freeze really well.

    For really special occasions add some double cream at the end!
  • Another dead easy dish is Salmon fillets with balsamic vinegar. This is so easy and really delish! Just grill/fry salmon fillets soaked in balsamic vinegar and coated with sea salt and black pepper. Yes its that easy. Its really nice with baked/mashed potatoes and curly kale steamed with garlic and coated with butter salt and black pepper. Very healthy too if you leave out the butter which I would not personally recommend.

  • The easiest desert I know is greek yogurt and honey but I am a savory girl rather than a sweet one. However my mum makes the most wicked pudding I have ever tasted a ginger based white choolate cheese cake dusted with cocoa. I have never made it though its on a bed of ginger crushed ginger buscuits I imagine coated with melted butter. The cheese cake is a conbination of cream cheese (ie ricotta and melted white chocolate) which is finally coated with a cocoa powder dusting.

    my signature starter - chicken and pear

    for 2 people (double up for 4)
    1 chicken breast, cubed or in small even sized chunks
    1 pear - chopped evenly can leave skin on
    knob or 2 btter
    glass white wine
    double cream - 2 tablespoons

    1. Fry the chicken in butter till cooked (10 mins),
    2, add pear, slighlty color
    3. Add white wine, boil down to reduce alcohol
    4. add cream and simmer for a couple of mins

    Serve small dish, side plate, with fresh french stick.

    Its gorgeous, everbody ive cooked it 4 has asked for the recipie

    posh pudding

    fresh raspberries 4 people 250g punnet - save 4 for decoration
    raspberry jelly
    fresh cream whipped
    white wine, 2 glasses

    Save 4 raspberries for decoration can add a mint leaf as well if desired.

    1. Spilt the raspberries between 4 wine glasses
    2. Make up the jelly, best bet break cbes, cover with cold water - microwave 1 min, - mix well
    3. add wine, I would suggest 2 glasses but can adjust to suit needs
    4. Leave to cool, then split bewteen the 4 wine glasses leave gap at top of glass - chill
    5. Lightly whip cream - into peaks
    6. Put cream on top of jelly mix, then add raspberry and mint leaf if using.

    Simple, looks posh being served in wine glasses

    This can be made the night before.
    KOULIBIAC


    75g long grained rice
    60g butter
    1large onion chopped
    1 400g can chopped tomatoes
    500g cold cooked flaked salmon
    2 tbsp chopped parsley
    grated zest & juice of 1 lemon
    pack rolled puff pastry
    1 egg beaten

    60g butter & juice of ½ lemon to serve
    lemon twists & garnish

    cook, cool & refrigerate the rice

    melt butter & fry onion gently till soft. Add the tomatoes, cook for 15 mins. Cool

    mix salmon, rice tomato mixture, parsley, lemon zest & juice, salt & pepper to taste.

    Put the mix down the centre of the pastry. Brush the edges of pastry with a beaten egg. Put over short edges, brush with egg. Fold over the long edges.

    Put fold side down in a baking dish, make pattern on top – hole – long s shape both ends. Brush with egg. Refrigerate till ready to cook – overnight is ok.

    Cook 220 degs gas 7 for 30 – 40 minutes.

    Melt butter & mix with lemon juice. Pour through the holes in the top garnish & serve with salad.



    I don't know where the recipe is from originally. My friend gave it to me. It is a wonderful dish, tastes great. It is nice cold as well. I would think it would be good with tinned salmon, but fresh salmon is nicer, and you don't need that much.

    Pudding - Eton Mess

    You will need...
    Strawberries
    Whipping Cream
    Ready Made Meringues (M&S are best)

    Whip the cream
    Bash up the meringues
    Mash half the strawberries
    Cut remaining strawberries into chunks

    Fold in all the ingredients and serve in glass tumblers.

    Assemble just before serving otherwise it will be a soggy mess!

    Hi Jet,

    Another vote for prawns.

    Tesco have large (and they are large) raw, peeled frozen king prawns selling for half price at the moment. £2.62 for 300g.

    I saute the prawns in garlic butter until they turn pink (which means they're cooked) and add a little black pepper and lots of chopped parsley. Serve with a green salad and some crusty or wholemeal bread.

    Tesco are also selling frozen langoustines and green lipped mussels for £1 for eight so you cold use those instead if you wanted.

    Serve it with a nice chilled white wine and maybe follow with a chocolate mousse, pavlova or a cheesecake which you can have prepared in advance.
