I'm hoping that you lovely people can help me!!
About two weeks ago I was given an ice cream maker and searched for recipes to use with it. Somewhere, on here I'm sure, I found a recipe for coconut ice cream.
I ordered some coconut milk with my food shop to make it and now I can't find the recipe!!
It was a simple recipe and I was really looking forward to making it. Usually I print them off but I forgot, if anyone can help I would be very grateful!

The simplest coconut ice-cream I make is natural yoghurt mixed with some coconut milk (add sugar to taste), chucked into the ice-cream maker and churned until it looks right . I also make it with just yoghurt and some dessicated coconut or coconut powder.Dum Spiro Spero0

For anyone that's interested, Lidl will be selling ice-cream makers for £19.99 from Monday. Having looked at the demo, IMO it's a waste of money when a balloon whisk and a rainy afternoon at home will do just as well.Value-for-money-for-me-puhleeze!

PS. Depending on the brand of coconut milk and its age, it can separate and the lighter, thicker part float to the top of the can. Shaking the can prior to opening should even it out to a creamy thickness. Some brands made in Western countries add thickening agents to prevent the milk from separating inside the can, because this can be misinterpreted as a sign of spoilage by people unfamiliar with coconut milk. It threw me the first time. It looked like dried white emulsion paint!The acquisition of wealth is no longer the driving force in my life.0
