how do you cook............

The chicken for chicken for chicken satay sticks?
I tried grilling but it ended up very very dry.

DS and DD both like the shop brought ones, (they have at friends places) I won't buy them as they are not free range.

I have made the peanut sauce which tasts great but cant get the chicken bit right.

what am I doing wrong:confused:

    I found this too!

    I now marinade the chicken on sticks in peanut oil with a bit of lazy chilli mixed in and leave it all day.

    Then I put the chicken in a hottish griddle pan, then serve with the peanut sauce warmed over. the oil makes it not quite as dry when grilling

    annie 123 - you can do it like this: cut chicken breasts into cubes. Marinade them in some soy sauce with brown sugar, garlic and a squeeze of lemon for a couple of hours. Then cheat: instead of grilling, fry the chicken cubes in some sunflower oil in a big frying pan or wok. Thread them on the skewers once done to your liking. Serve with peanut sauce.

    Flame-grilled is best :)
    Make sure your chicken strips are thin so that they'll cook quickly.
    Sear the outside on the flames and the rest should cook through quickly enough to remain moist.
