Chicken Satay

I just wondered if anyone had a good recipe for chicken satay as me and DD love them....thanks in advance
Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts :heart:

    Ingredients
    For the peanut sauce
    4 tbsp peanut butter
    2 tbsp sesame oil
    1 tbsp soy sauce
    1 tbsp honey
    1 tbsp milk
    1 garlic clove, peeled and crushed
    ½ lime, juice only
    For the chicken satay sticks
    1 chicken breast
    2 tbsp soy sauce
    2 tbsp honey
    pinch of chilli flakes
    1 tsp sesame seeds
    1 tsp soft brown sugar
    handful fresh coriander, chopped
    1 garlic clove, peeled and crushed



    Method
    1. To make the peanut sauce, place the peanut butter, sesame oil, soy sauce, honey, milk, garlic and lime juice into a food processor.
    2. Blitz until smooth and transfer to a serving dish.
    3. For the satay, mix the soy sauce, honey, chilli flakes, sesame seeds, sugar, garlic and coriander together in a large bowl.
    4. Cut the chicken into strips and marinate in the satay sauce for ten minutes (or as long as time allows).
    5. Thread the chicken strips onto four wooden skewers.
    6. Heat the oil in a chargrill pan until hot.
    7. Chargrill the satay sticks for 2-3 minutes, turning occasionally, or until cooked through.
    8. Remove from the heat and transfer to serving plates. Serve the peanut sauce alongside.

    That's pretty much how I make Satay sauce but I use boiling water rather than milk and add some chilli sauce too. Haven't had it in ages though. It's good because it tastes like a treat but is really quick and easy to do.

    If you want a really quick way of making peanut sauce then just put in about 1/2 jar of crunchy peanut butter and heat, then add cream until you get the consistency you want (need to do this fairly quickly or it becomes gluey again) and add a couple of tbsp of sweet chilli sauce, then add juice of half a lemon and chilli powder if you want it a bit spicier,

    One tip for wooden skewers is to wet them before putting the meat on, this stops them burning!!!!
  • I wanted to try this the other week & all the recipes I found seemed to have a lot of ingredients that I didn't have in them so I just sort of adapted things to suit myself:

    I brought half a tin of coconut milk to the boil & then added about 3/4 jar of peanut butter (asda smartprice). I then added chilli powder to taste (I used quite a lot but it's down to personal preference really), 1tsp sugar & salt & pepper to season. You then add the remainder of the coconut milk & reduce to required thickness.

    It was really scrummy. I had it with chicken in tortilla wraps.

    I've been experimenting a bit with pasta sauces and stir-fry sauces so I can my make my own and cut out nasty additives. My housemate and I have been trying to make a satay sauce but we haven't been very successful thus far! Our next attempt is going to be a bit of peanut butter and some coconut milk :p

    But before we try that, I thought I'd post here and see if anyone had a good recipe....

    Don't know a recipe, but peanut butter and coconut milk sounds a good starting point. I'm sure you need soy sauce as well.
    I have plenty of willpower - it's won't power I need.
