You can just grate some into your sauce and stir it in, it melts very easily.I have the mind of a criminal genius. I keep it in the freezer next to Mother....0

Hi Lynz,
Too late for you tonight but I just slice bits off the coconut cream block and add to whatever I'm cooking. It dissolves into the sauce in seconds.
I made Hugh Fearnley-Wittingstall's satay sauce tonight (with chicken, not pheasant) and it was so easy to make and tasted fantastic!

I made this last night but had to make a few changes - did it with chicken on sticks
1 onion finely chopped
2 garlic cloves, crushed -garlic puree
1 tbsp groundnut/sunflower oil -vegetable oil
half- 1 fresh green chilli (or to taste) finely chopped - chilli powder -mild
2-3 tbsp dark soy sauce
1 tbsp brown sugar
125g crunchy peanut butter
juice of half-1 lime - good slug of lemon & a little lime cordial!
 was'nt too sure if lime cordial with the lemon would work but as it already is quite sweet from the sugar it worked really well!!!;)
might use 1/2 & 1/2 crunchy & smooth next time though as found it a little too lumpy but will definately be a regular. Going to try beef next:j
I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0 -
Really simple recipe -
4 tbsp smooth peanut butter
100ml soy sauce
4 chicken breast filets
Mix the peanut butter and soy sauce together slowly until smooth. Add chicken and marinate for at least 2 hours (overnight would be great) in the fridge.0 -
Similar to catowen I do a satay sauce just with peanut butter, chilli & soy sauce whizzed together in my food processor, sometimes add a bit of yogurt too or just water to thin it down. Adding a squeeze of lime juice is nice though, but I don't like adding sugar to it.0

I've made HFW's satay sauce before but didn't have any lime so substituted lemon juice and it was delicious. I prefered it with smooth peanut butter rather than the crunch one but that's probably just down to personal choice.

my satay sauce:
6 oz peanut butter
1 -2 tbsp red thai curry paste
1 can coconut milk
adjust the curry paste to how hot you'd like it, marinate the meat in it and grill.0
