  • Have you tried making rhubarb and ginger jam? It's to die for!!!

    Use the same weight of sugar as rhubarb. (It's a lot, I know)

  • Thankyou!! I was told about putting stem ginger in the jam, but don't have any. Do have lots of root ginget though so was going to give that a go. Thank you!

  • I think root ginger would be perfect. Personally I can't stand stem ginger, so I would leave it out. You only need about 25-50g of root ginger if using about 2lbs of fruit.

    Sorry if this is a stupid question, but can you use frozen rhubarb to make Jam? I only ask as I dont know anyone with any fresh rhubarb and Farm foods sell it frozen, really reasonably :)

    As above, if anyone can help please - Googling produces 2 untempting U.S recipes - a jam and a tiramisu . I would just like the taste of raspberry and edge of rhubarb - or will I better combine them as a fruit mix to freeze?

    Have now found reference to a 'delicious jam' recipe in Mary Norwak's Farmhouse Kitchen - on a crofting family's site - Musings from Stonehead.
    I don't have this book and wonder if anyone would kindly pass me the recipe details.

    I would stew the rhubarb (ie cook gently til soft with a bit of water and sugar) and then make a quick fool by folding in (but not mixing completely) whipped cream and some raspberries. You could get over-excited and do individual ones with layers custard/sponge cake/shortbread biscuits - sort of sundae/trifle type thing

    Rasps freeze well without any prep. Stewed rhubarb does too.

    Yes - I luckily have raspberries frozen from last year's crop(new ongoing and incoming, when blackbirds allow)and neighbour passed on some rhubarb. Have never made fools, no reason why - although I've been made one and made myself one all too often. C'est la vie - for the moment I'll try and stay in la cuisine.

    When I make rhubarb crumble I sometimes add some strawberries and they give it a delicious taste. Might work with Raspberries too?
