HM Bread Question

Just wondered if any of you lovely people could help me....

I am starting to make my own bread but I keep getting massive holes in the bottom of the loaves where I have to prise the metal mixer thing out the bottom. Is there any way of not getting it stuck in the loaf in the first place or minimising the damage?

    nope there isnt im afraid, thats what happens when you use a BM

    ive banished mine to the ebay pile since i found that doing it by hand tastes better and doesnt look and taste like a square brick :rotfl:and just as quick
    but it still tastes better than shop bought with all their chemicals added
    If we can put a man on the moon...how come we cant put them all there?

    I find it's a small price to pay for having delicious home made bread! I don't know what sort of BMs you both have, but I have now had 4 machines over a period of years and each has produced lovely bread.... the hole/slit doesn't bother us.

    Hi, I always spray mine with frylight before I add ingredients, never sticks!

    Make your bread by hand - it's a great workout, and the bread tastes better than that from the BM :D

    Alternatively, immediately after the BM finishes the final kneading cycle, tip out the dough, remove the paddle, and return the dough for rising and baking. You'll still have the spindle shaped hole, but it won't be as bad as the paddle shaped one.

  • Or you could make dough in the machine and transfer to your oven for baking in a regular bread tin. I've only done this with 'specialist' breads but I'm sure you could do it with loaf bread too :)

    Yep. :)

    For those I set a kitchen timer to around 20-30 minutes so that the dough has had its first knock and some time to prove. I take it out and give it a good bashing and then let it do its second prove in the baking tin, or on the tray if I'm making rolls.

    I'm pretty sure mine on dough setting knocks and proves it twice - so if I wait for the whole program to run then I'd be knocking and proving it for a third time, which never seems right to me.

    Or am I just making work for myself?

    If you remover the baked loaf and allow it to cool for a few minutes then the paddle comes out much more cleanly than if you pull it out while still v hot.

    mine did this and i adjusted water added a tiny bit more and its never done it since i have a panasonic

    My panny started to leave the paddle in but I found a quick spray of frylight or olive oil did the trick.
