Hi,
I tried making yoghurt for the first time today. I used semi skimmed UHT, milk powder and greek yoghurt in a thermos/flask thing. After about 6 hours it had a lovely taste and was thick but it had a kind of slimy consistency. I didn't want it too sour, which is why I didn't leave it longer.
Does anyone know why this happened?
I've been trying to read through this thread but there is just too much!
I don't mind the texture as it kind of reminded me of a type of fil (långfil) from back home in Sweden.0 -

I have trawed the net and came acroos some very helpful info here. Some posters have mentioned UHT milk. In Ireland I cannot find this anywhere! Tried Dunnes, Tesco Lidl and Aldi. By UHT milk do you mean actually Soya milk as in not dairy Milk?
I bought the Rachel Allen Yogurt Maker from a Voucher deal and had no idea I neede to cook milk to some temp etc etc. I saw youtube vids and they showed pourin milk into a bowl, adding some Natural Yogurt from a tub and something else then straight in the machine. No cooking!
Please can someone please tell me if:
-I use Soya milk or somethin so I don't have to precook it and more or less put in the Rachel Allen yogurt maker?,
-Is a starter a tub of yogurt already made eg a tub of shop natural yogurt?
-is Dried milk evaporated milk or codensed milk?
I'm a first timer in all things yogurt or making things from near scratch to be honest but im trying!!!:)0 -
I did a blog post once about making yogurt. It's dead easy, don't need any gadgets, or fancy ingredients, you can make it in a slow cooker.

You mentioned UHT but is this also called Soya milk? i really want to make use of my new gadget but seriously don''t want to be trying to do this "cooking milk till 83 degrees then down to 43 degrees but no lower" as on intructions melarcy!:p0 -
Hello Taz. A slow cooker is usually used for cooking a whole meal such as a casserole. It has a metal pan which you plug into the wall and inside is a ceramic bowl. You lay the ingredients inside and it cooks a meal while you are out at work which is ready to eat when you get home. You can pick up a cheap slow cooker at a car boot sale or charity shop. Sorry I don't know what a Rachell Allen yogurt maker is.
UHT is not soya milk, it is ordinary milk which has been through several heat processes which kills off bacteria which allows the milk to be stored store a lot longer. I personally don't like the taste of UHT milk.
I tried making yogurt with soya milk, it didn't set like a normal yogurt and had a funny taste, not to my liking.
I wouldn't worry too much about exact temperatures, I don't have a thermometer I use my intuition. As long as it's near enough it should work.

Taz, UHT is often known as Long Life Milk and comes in tetrapak cartons usually near the powdered milk. Hope this helps.
I'd give it a try with a couple of tablespoons of 'live' yoghurt as a starter and the milk at room temperature. Mix well (with a couple of tablespoons of powdered milk added for a thicker yoghurt) and put in your RA Yogurt maker for about 8 hours. Not much to lose if it doesn't work. There's a lot of mumbo jumbo talked about making yoghurt - I don't think the first people to make it used all this gadgetry ! :rotfl:0 -
Does anyone know if it works out cheaper to use easiyo yoghurt? Is it any good? It seems to me that it will take a while to recoup the initial outlay, but I could be wrong! Thanks.0

We have one but do not use the packets.
We buy a large pot of Live Culture plain yogurt and freeze it in an Ice cube tray.
We then use skimmed or semi skimmed milk with one or two of the frozen cubes of yogurt.
Works for us.I used to be indecisive but now I am not sure.0
