Urgent help needed with Mint Jelly

Help, I am boiling the apple liquid as per Choclare's recipe (allow 1lb sugar for every pint of juice) to make the jelly. It has been simmering for about 15 minutes and not 'turned'. I've just looked at the sugar bag and its Light Cane Sugar - made with cane sugar AND Sugralose. What shall I do? Add more sugar, go and buy another bag? :confused:

    I see you caught me during my lazy afternoon nap and have presumably sorted something by now. I'd guess you might be able to recover it by adding more proper sugar. If you have gelatin you could help set it with that.

    If not, set it aside (freeze?) and use it as a base for some other fruity type thing.

    Hi Squeaky, I wondered where everybody had gone! Anyway you are right I solved the problem. I just kept boiling and boiling until it 'turned' - probably had about half the quantity left. Luckily I had only started off with 2pints, just in case it went wrong. Got another bag of sugar and the 2nd batch worked perfectly. Thanks..... :D

    Oops, I've just noticed this post - I've got a cold and didn't switch the computer on yesterday as I felt too groggy - so not ignoring you, honest! I would only have said add more sugar and you did that anyway, so I wouldn't have been much help...

    I'm so glad you're trying my jelly recipe! (Actually not mine at all, came out of an ancient Homes & Gardens or Country Living or something, years ago.) Just to add - and I'm sure you'll probably say, "Well, Derrr!" - the one thing it WON'T be is green - it'll be clear, or yellowy clear - only goes green if you add food colouring - and why would you want to?
  • Hi CC, hope your cold is better! We had roast lamb and mint jelly on Sunday, it was absolutely lovely, :T definately worth all the effort. I'm not worried about it being geen, I think it looks great just as it is. Thank you.
