  • I have a thrifty approach.
I save the vinegar from jars of pickles and use that. Hence:

    Pickling vinegar
Juice from a can of pineapple
    tomato puree

    Thicken with cornflour.

Water down the vinegar if its too strong or I like to use a mild vinegar from pickled cucumbers which gives a different flavour.

If you want a chunky fruity sauce, use the pineapple too and add a chopped onion.

At its fastest/simplest, I just add tomato puree and cornflour to a finished jar of pickled cucumbers and shake vigorously to combine then add the juice from the pineapple and simmer or even faster in the microwave.
