  • Well done my friend swears by baking bread by hand, although I have never tried it myself I might have a go one day. It is always nice when the bread gets eaten straight away

  • Very well done. I once tried making my own bread, in the days before bm's, but I think our house was too cold. I have thought about making the plait thingys with the dough from the bm, but them memory of my first attempt won't let me.

A cold house shouldn't be a problem as you can leave dough to prove in a fridge! Just takes a bit longer but cold proved dough has a lovely texture, tho'your hands get cold when kneading!
    Keep going and well done

I'd love to follow you in the hand making but alas i get very inflamed tendons in my wrists so it's not an option for me (boo hiss)
At least in the BM I can make cakes and bread etc without the pain :)

I was only a young thing at the time and had no one to ask, I didn't know until I started reading these thread, that bread would still rise after a whole day of sitting in the cold kitchen. The book had said leave to rise for 2 hours, it didn't say that it might take longer:confused:.

  • WEll done!! my breadmaker starting playing silly b*ggers last week so I handmade some loaves - and you're right, they taste so much better. I think its the slow proving of the dought that gives them more taste. I am going to try proving some dough overnight in my conservatory to see how that comes out - will let you know!

i want to start making bread when i feel more confident.. and i dont have a bm..
what was ther receipe that you used

    all i used was
    700g bread flour
    2 level tsp salt
    knob of butter
15g fresh yeast, you can get this at any bakery dept of any supermarket and best of all its FREE
    400ml tepid water
sifted flour/salt and rubbed in butter, mix yeast with water (to activate) added together then kneaded for about 10 mins, (its my time of the month so a lot of aggro was vented and im being nice to the kids :D:D:D) into a bowl covered with oiled clingfilm til doubled then kneaded again put into 2lb bread tin and cover again with same clingfilm til doubled again cooked 35 mins in 230c gas mark 8
the house smells wonderful still and its even better than shop bought coz i know theres no carp in it

try it and let me know how you get on

    Well done you!

For those who find the kneading troublesome you can still use your BM; just use a 'normal' recipe and put it on the cycle that lets you take it out for baking in your own oven.

I don't personally like bread from a BM as you need a lot of sugar in it to make the yeast ferment faster, and you need a lot more yeast to start with too.

All the best with it, and if you have a food processor look at that too as some of them will knead dough as well, then there's always your trusty Kenwood or Kitchen Aid!
