    Thanks for the suggestion twink but thats what I did do, I think i'm just funny about lumps, I wont eat lumpy yoghurts either lol.

  • My onion soup is very simple indeed. I'm afraid I don't make my own stock through laziness (and no freezer, so it would be a lot of hassle for one or two meals).

    Put kettle on

    Chop a few garlic cloves and while these are sauteeing in oil, chop some onions. Sautee this until it starts to brown and then stir in a spoonful of brown sugar and a spoonful of flour.

    Meanwhile, make a jug of stock using whatever means you want (I just use Marigold veggie stock powder but it's up to you). Pour into the saucepan, stir to make sure the flour dissolves and then leave simmering for at least half an hour. Longer is better.

    Serve how you like. I don't bother to blend - I just grate cheese into it (if I have any) but doing the 'cheese in top, then under the grill for 5 minutes' thing is jolly nice too. I make enough to last me 2 days. Top tip - it's actually nicer the next day, IMO, because it gets more oniony.

    Should take about 8 minutes preparation time and cost abut 50p including bread

    Say's to use cream (optional) but I think it's better (and healthier) without.

I totally got my recipe from the same book as the blogger did :-) it is a really good cookbook actually - he's very into cooking with natural ingredients (although to be honest I can't afford to go to Farmer's Markets and delis every day, unlike Mr Slater...sigh...although if I keep saving money you never know!)

    There's another thread here with a couple of recipe ideas on it. ;)

    I freeze mine in margarine containers, tupperware or strong freezer bags.
