soup ideas using minimum ingredients

I did carrot and tomato soup the other week:
chop and fry onion
Add spash of worcs sauce
Add lots of grated carrot
Add handful of red lentils
Add carton of passata
Add stock cube and extra water if needed.
Cook until lentils are done. Whizz if required.
Kids loved it and it made a really thick soup.
Have the gammon water in the freezer - been keeping it for ideas and think this will now be merged with lentils and onion to make soup - cheers MrsM.

This is one of my favourites - slow cooked roasted vegetable soup. I substitute other vegetables as wanted.
The great thing about soups is that with good stock, onion, seasoning you can add pretty much what you like. You can then liquidise, or leave chunky. I'm always inventing new recipes using whatever I have available, or what is in season.

I'm a soup inventor too Penny.
This week I made a cauliflower, brocolli, leek and cheese bake and couldn't be bothered making veg stock with the trimmings but felt it a waste to feed them to the worms in the wormery so I boiled up the brocolli stalks, cauli leaves and leek trimmings. Made a basic white sauce, added the boiled veg and cooking water and a lump of (mouldier than it should have been) stiltion from the bottom of the fridge, whizzed it up et voila.....In OH's words, the best Brocolli and stilton soup I have ever made.0 -

Thanks for all the lovely soup tips. I'll be trying some of them out today and the next couple of days as I managed to rescue an organic box of veg from the reduced bin at Tesco's last night...
Knocked down from eight quid to a pound whoo hooo!
I worked out using the store cupboard spices and bits and pieces I can make about freezered 10 meals-for-one. Unbelieveable really.....
Don't laugh but I scrapped my meal planner and my weekly meal budget for a different kind of challenge. I've turned veggie for four weeks and buy reduced veggies and bits from the likes of Asda and Tesco and make them into meals with the aim of eating for £1.20 a day or less.
It's only for a month but it is surprising how healthy I'm eating! I also have plenty of vitamin supplements and things but I've actually lost my cravings for crisps and chocolate....
I've also dropped a dress size
I absolutely love soups at the moment - chinese chicken and sweetcorn.
Put shredded chicken into a pan, add water, chicken stock cube, garlic, soy and chilli, bring to boil, add sweetcorn and stir in a beaten egg. Season more to taste. It really is delish.
PS does anyone know what that website is called where you type in a certain amount of ingredients and it comes up with suggestions for you?

Basic gist of soup making in the House of Buffy Bat
Onion
Stock (usually stock cube and water...I keep my own home made stock for noodle soup)
Veg and/or pulses
Herbs and other flavourings e.g. chilli, coriander, black pepper, curry powder etc.
Fry onion, add veg of choice, stock and herbs/flavourings. Cook. Blend if required. Eat.
My favourites:
Lentil
Carrot and coriander
Chilli bean and red pepper
Mushroom (but I never add milk or cream to mine)
Curried parsnip
Probably the most "complicated" soup I make is chunky vegetable soup. Fry sliced leeks, chopped celery and diced carrots. Add a couple of tins of beans (yes I know I could use dried but I like to stock up on Sainsburys 3 tins for £1 which covers a really wide range) - favourites for this are black eyed beans and cannellini, two tins of tomatoes, chilli flakes and fresh rosemary from the garden, and some veg stock. Bung lid on and wander off to do something else - just before serving stir in some green pesto - and serve soup with some nice bread - yum yum! Courgette soups is as simple as you can get, and cheap in the autumn.
It's also delicious- DH can't see the point of courgettes or marrows, but even he likes this-
grate as many courgettes as you like. If you use marrow you may need to peel and deseed it first. Melt some butter/oil/mixture of both in a large pan, add courgette with seasoning including grated nutmeg if you have any.
When cooked and soft blitz. And that's it. It tastes as if you've added cream to it.
Tinned tomatoes are a good soup base. Add to cooked lentils and blitz (a bit of lemon juice and some herbs like rosemary are good additions), or add carrot, potato, rice etc and blitz or not once cooked.
Leek and butterbean is a good alternative to leek and potato.
