Hoping some of you soup inventors might be able to help me on how to make a soup? I'd love to start making HM soups and, in particular, was wondering if anyone had any ideas on how to copy the Baxters Healthy Choice Smoked Bacon & Three Bean.
The ingredients (as on the tin) are as follows: water, carrots, potatoes, red kidney beans, concentrated tomato paste, cannellini beans, borlotti beans, tomatoes, streaky bacon, spinach, green peppers, red peppers, onions, red lentils, cornflour, sea salt, garlic puree, yeast extract, basil, chilli powder, black pepper, parsley, red chilli puree, roasted ground coriander and vegetable oil.
Wow - Is there a thread for soup using the MOST ingredients???? Sorry this is the opposite of the OP question but thought you 'soupies' might be able to help? Where on earth would I start on trying to recreate this soup? And how on earth do you make HM soup?? I have a slow cooker FYI.

going to attempt a carrot & orange soup later, my soup NEVER tastes nice & I haven't a clue why. I'm not a disaster when making anything else so how can soup the basic of basics be so bad

My home made soups used to look and taste horrible, bit like sludge. Think the problem was I put in too many different ingredients - whatever was to hand, any veggies, herbs, pulses etc.
Now, I start with the base, as mentioned before, of a couple of onions sweated in a little oil, then just one or two other veggie ingredients, veggie stock and then perhaps a fresh herb or spice ingredient. This way I find the flavours more intense and recognisable. Some e.g.'s
Parsnip and apple
Curried parsnip
Carrot and coriander
Mushroom made with chestnut mushies and a few dried porcini ones
Butternut squash
Jerusalem Artichoke
I also find not overcooking helps...I used to boil away for hours(!)...now just 20 mins or so.0 -
I love making soups and seem to only be able to make a massive vat of the stuff, never a small amount just for that dinner. I usually just use whatever veg we've got left and make a soup although I do try and stick to one or two vegetables.
Tonight I plan to make a sweet potato, parsnip and lentil soup (I usually use lentils as I think they help to bulk out the meal so it's filling enough, and also add some needed protein). I'll fry an onion, garlic, sweet potatoes and parsnips. Add some spices (probably cumin, coriander and cinnamon) and then some lentils and some veg stock (I cheat and use a stock cube, I'm not sure how to make proper stock). I bring to the boil and simmer and then whizz it up (and add a little more water if it resembles baby food, I love thick soup but not too thick!).
Soup and crusty bread is so comforting on a cold night!
There will probably be far too much so it will be put into portion sizes and frozen.0 -

Right then…let’s see…I always use tinned beans so this is how I would do it…obviously if using dried you would need to soak/cook beans first.
How about using:
Onion chopped
Garlic chopped
Chilli flakes
Carrots
Smoked bacon snipped into pieces
Red kidney beans
Cannellini beans
Borlotti beans
Tin of tomatoes (I’m a lazy moo and tend to buy chopped ones…you could always buy whole ones and chop them yourself J)
Vegetable stock
Black pepper
Herbs of choice (I have to confess I would probably use dried herbs for this!)
Fry the onion, carrot and bacon together until the onion is soft (the fat from the bacon should be sufficient but if you need to, add a little sunflower oil) Add the garlic and fry for a bit longer. Add the chilli, beans, tomatoes, veg stock, pepper and herbs, and simmer for about ½ hour.
I guess you would either need to make a lot of soup to use up all the beans (of course you could always freeze it in portions), or just use some of the beans in the tin and freeze the rest (or use them in a bean salad or something).

My aunt saves broccolli stems to use in all her soups, they add an nice flavour and thicken it slightly! Plus there's no waste as the stalk generally gets binned or composted (I hope composted!)

Ok I tried the carrot & orange soup as per the OP & yay I can make nice soup lol. Well I really liked the liquid wasnt so sure about the lumps (I don't have a liquidiser so just blended it which still left lumps) but i would happily use the liquid again & just find another use for the lumps
even the children liked it :O
